Welcome to the experience

Founded by Damone Johnson in 2016, Island Infusions Catering is the premiere choice for food and event services in the Tri-State area. Our menus are influenced by a unique coupling of the owner’s Jamaican-American heritage and his immense love for cuisine found the world over. We seamlessly blend this set of experiences to create innovative, elevated, and inspired dishes. Our dishes are crafted by harnessing the aggressive seasonings and bold spices found in island cooking and pairing it with classical cooking techniques and finesse. We aim to change the landscape of the culinary world by redefining the limits of Caribbean cuisine.

When Executive Chef Damone Johnson began catering, his mission was a simple one: to show that Caribbean cuisine could produce innovative dishes of the highest quality and should not simply be regulated to local mom and pop shops. This mission continues to be the backbone for our company, reflected in our menus being heavily influenced by the owner's Caribbean-American background. We seek to elevate Caribbean cuisine on the international culinary stage, marrying the bold, bright, and unique ingredients, flavors, and cooking techniques found in Caribbean cuisine with other popular dishes and cooking styles found the world over. We infuse utmost care, passion for our craft, and a little island flavor into each and every menu offering and, likewise, into each and every event. Utilizing only the best and freshest seasonal ingredients from our local partners, we ensure that we leave you, the customer, completely satisfied with your event!

Damone Johnson

Executive Chef, Owner

Chef Damone Johnson graduated from the University of Pennsylvania in 2012. He has 5 years of catering experience, which includes a number of business launches and luncheons, church events, family reunion, and cookouts. Originally from the Bronx, New York, his love and passion for cooking was sparked at an early age as he watched his parents' preparation of their traditional island dishes, and using their inspiration to cultivate his own style of cooking. He now hopes to translate this love and passion for creating cuisine into unforgettable plates for his clients. His BBQ Jerk Chicken is one of the most requested items on his menu, and also doubles as his favorite food! He also enjoys cooking (and eating) any dish that involves steak! His goal is to ensure his passion and respect for every ingredient shines through in each and every plate!

Lathania Simpson

Associate Chef

Chef Lathania Simpson graduated in 2013 from the International Culinary Center in New York. She has 4 years of professional culinary experience, working for Wholefoods Market prepared foods department for a year and in hospital food service for three years. Lathania is a chef who admittedly loves eating and enjoying food just as much, if not more, than she likes preparing it. Her fried chicken is LEGENDARY among her peers, and she loves to cook anything with shrimp in it! Food is her passion, and she is thrilled to be a part of a group of other food enthusiasts!

Donna
Welsh

Event Coordinator

Donna Welsh is the mastermind behind D'vine Events, a top notch full-service event and decorating company. She has been in the business officially for over 11 years, but has been styling events for as long as she can remember. Donna works with each client from conception to coordination to execution. She takes a hands-on approach, meeting with clients individually to refine and craft their ideal vision,  taking into account personal style and budget to curate an event that fully reflects her client's style. She's coordinated baby & bridal showers, birthday celebrations and weddings, and does it all with her characteristic eye for detail and unique flair.  She describes her personal style as modern, vibrant and elegant and she specializes in one-of-a-kind floral arrangements. She and her team have collaborated with Island Infusions on many events over the years,  and her favorite Island Infusions creation is the pan seared pork chop!
